Recipes I love.

I had lilli and D over for chili, beer, Wii and puppy time (good times!). She requested these recipes so I figured I would post them for all!

I'll start with the chili -

Everyone has a chili recipe, but seriously.....this one soooo good, soooo easy, sooo affordable, and pretty good for you too!


Ingredients:

- 1 lb ground meat (lean beef, turkey, meat substitute. I use the 99% fat free turkey as I am on WW)
- 1 medium onion, chopped
- 1 large and 1 regular size can of diced tomatoes (drained)
- 1 can rotel (drained) - do not get kind with oregano or other seasoning, just regular rotel
- 1 can reduced fat cream of mushroom soup
- 2 cans chille beans (drained)
- 1 packet chili seasoning

1. In a large pot saute onions until transluscent
2. add meat and brown
3. add rest of ingredients and stir until well mixed, cook on medium heat until it simmers and is heated throughout

Yes it is that easy. I pair it with either tortilla chips, corn bread, or rice. If I am trying to be good, I go with the baked tortilla chips. I had never hear of this before, but the GF puts mustard on her chili. I still haven't tried that one yet. Anyone else familiar with this?

Next comes the pumpkin chocolate chip cookies-

They are awesome. They are high in fiber and low in fat. I make everyone try these since it is so hard to believe how good they taste, given how healthy they are. So far everyone has enjoyed them!

Ingredients:

2 cups canned pumpkin (not the pie filling, just the pumpkin)
2 cups sugar
1 cup unsweetened apple sauce
2 eggs
4 cups whole wheat flour (can use white/wheat or half white flour/half whole wheat flour depending on your taste. I like the whole wheat)
4 tsp baking powder
4 tsp ground cinnamon
1 tsp salt
2 tsp baking soda
1/8 cup fat free milk to dissolve baking soda
2 tbsp vanilla extract
12 oz semisweet chocolate chips

Mix everything together. Place spoonfuls on baking sheets and bake at 350 for 10-12minutes. If you use this recipe and make 75 cookies, they are 1 weight watchers point per cookie.

I make this huge batch and then freeze them. They are great if you pull them out of the freezer and pop them in the microwave for a few seconds. They are also great with a dab of fat free cool whip.

    Firstly though, what is 'rotel'?

    Nope, never had mustard on chili before, but i also haven't made it using mushroom soup before either, LOL.

    I dont think I have ever seen canned pumpkin over here, I'll have to look harder, or else you can make these wen I next visit :)

  2. Ooh...I got it all right but the rotel. We re-created it the very next day and the kdis and I have been eating it all week. I'm thrilled to see the cookie recipe. We will so be making these.

  3. Haizey - "Rotel" is a brand name. It is diced tomatoes with green chilies. You could probably do it yourself, but I find using a can opener is much easier!

    Again, you can make the pumpkin puree pretty yourself, but the canned is much less work!

    I am more than happy to make these things next time you visit! You better hurry though, chili season is almost over!

    Lilli - sorry I didn't get you the recipe sooner! The rotel just gives it a little kick. The cookies are sooo easy too. The kids can help!
